People living in Valtellina have always selected Bresaola made with rump to be served: according to tradition, farmers in Valtellina served a nice dish of rump to their best guests, with a glass of good red wine, locally produced. The P.g.i. label still protects the compliance with a similar tradition, allowing a unique part of the Valtellina history to be served everywhere.
