The Brisa is a rustic bresaola with a full and unmistakable flavour, which contains a world made of history and centuries-old traditions in every slice. What makes it unique is the manual processing, with a skillful massaging of the meat, as well as a special mixture of spices and a careful seasoning that benefit from the fresh air coming both from Valtellina and Valchiavenna, where the production is located.
In addition to the Brisa, in “L'Antica Ricetta” line you’ll find our Parsut, the ancient Fiocco di Valtellina cured raw ham produced according to old recipes. In the product you’ll find the taste of a centuries-old tradition that gave life to an unmistakable and beloved product. What makes the difference, in addition to high-quality raw materials, are the climate of these valleys, the fresh air that runs through them and the manual processing that coming from the past, are still a joy for every table.
Who doesn't know (and love) Bresaola? A cured meat with very special characteristics, a truly unmistakable taste, appreciated by all ages. The Community trademark of Protected Geographical Indication has been created in order to protect this product. The trademark can only be used by those certified producers in the Sondrio Province who adhere to a strict and well-established Production Disciplinary.
Born officially in 1996, Bresaola della Valtellina PGI is typically produced in the areas of Valtellina and the nearby Valchiavenna valleys (where Bresaola was originally born).
The climate and the valleys’ shape, together with the fresh air coming from the Alps are what make this product with so particular: these are the perfect conditions for the seasoning of Bresaola.
These landscape characteristics go along with a skillful product processing handed down from generation to generation: just think that almost every family in Valtellina and Valchiavenna keeps and hands down its own exclusive Bresaola recipe.
The PGI regulations establishes, as well as the processing area location, the norms to follow in order to use its quality mark: it guarantees that the product respects all its canons, from the temperature to the humidity of the seasoning, from the timing to the massaging of the meat.
