This Quality Certification is a model recognized both in Europe and in the rest of the world, and in particular by the Global Food Safety Initiative (GFSI), an international initiative whose main purpose is to strengthen and promote food safety throughout the supply chain.
The IFS standard applies to food companies which supply branded food retailers and identifies the specific elements for a management system focused on products’ quality and hygienic safety, taking the HACCP methodology as a reference for planning and implementation.

The term “Protected Geographical Indication” (PGI) indicates a origin mark which is awarded by the European Union to agricultural products and foodstuffs that have a given quality, reputation or other characteristic based on their geographical origin, and whose production, processing and/or preparation takes place in a given geographical area.
In order to obtain the PGI designation, at least one stage of the production process must take place in a particular area: in the case of “Bresaola della Valtellina PGI”, it is the province of Sondrio, located in the central Alps’ area.
