The Rubustellini Speck differs from the one of neighboring South Tyrol for our delicate smoking and the use of leaner pork legs. Every single piece of meat is sprinkled with salt and aromatic herbs for an optimal dry salting, while the smoking is still done in a natural way, using precious wood essences.
